What I Eat In A Day: Getting Back Into My Routine With Dairy-Free, High Protein, High Fiber Meals

Welcome to my first What I Eat In A Day post. I’ve wanted to write this post for a while, but life always seemed to get in the way. After a crazy couple of weeks- including recovering from getting my wisdom teeth out (where I was pretty much exclusively eating soup and smoothies for a week) and then after recovery celebrating several birthdays- including my own, I feel like now is a great time to write this post.

Things have finally settled down and I’m ready to get back into my normal routine. For me this means, eating balanced, nutrient-dense meals that help me to feel my best. On this day my goal was simple: focus on getting in a good amount of veggies and protein.

Here’s what I ate on this day:

Prebreakfast:

When I woke up, I had a serving of collagen with lemon water. I have been taking collagen for many years. I truly believe that it helps with my knee issues. I also drink lemon water each morning, because I like it and it helps to wake me up.

Breakfast:

I wanted to start the morning off with some greens so I decided to make a smoothie.

The smoothie was made with vanilla protein powder, almond milk, banana, and spinach. I used 1 scoop of protein powder, about 1 cup of almond milk, 1 cup of frozen banana, and about 1.5 cups of spinach. I could have pulled back a bit on the banana because while this smoothie was good, it was a little too sweet. It was also more of a liquidy consistency, and even though I usually like a really thick smoothie, this hit the spot.

Snack/ Second Breakfast:

My breakfast smoothie was pretty light, so a couple hours later I was ready for another meal.

I had a piece of whole wheat toast topped with a serving of Trader Joes dairy-free cream cheese (the BEST on the market! It tastes so good!), 2 pieces of turkey bacon, and two eggs.

This was really good and satisfying.

Lunch:

I wanted a salad, but we did not have many fresh vegetables on hand, because I had not gone to the grocery store yet. We did have enough for me to throw a quick meal together so I made it work.

I had a bed of mixed greens that I tossed with 1 tablespoon of coconut aminos. I then added some cooked shrimp that I had meal prepped a few weeks ago that were in my freezer. I air-fried some diced potatoes that I also meal prepped a few weeks ago that I pulled out of the freezer. I also had a few green beans that my daughter did not finish from the night before.

I would normally add avocado to something like this, but I did not have any so I did not. Even without it, this meal was still good and filling.

Snack:

I was craving something sweet in the afternoon, which I expected seeing as though I had dessert for the last couple of days. The thing is, I didn’t want to have anything with sugar because when I have sugar, I tend to want more sugar, and I was attempting to get rid of those sugar cravings. Instead of eating some of the birthday cake from my daughter’s birthday, I decided to make a mug cake. I am not one to deprive myself, so I decided to make a protein mug cake that I have pretty often. It’s delicious and I use maple syrup to sweeten it. It’s made from oat flour, chocolate protein powder, almond milk (normally I use soy milk for this, but we were out), chocolate chips, cocoa powder, and baking powder. It tastes like cake, so my sweet craving was satisfied in a balanced way.

Dinner:

For dinner, I also pulled from my freezer! So glad I had some things prepped that I could pull from on this day.

I had a turkey and veggie protein pasta. I used protein pasta, ground turkey, spinach, red onion, and bell peppers. After I warmed the pasta up I added a tablespoon of dairy free butter and a teaspoon of hot honey. This meal is so good!! I eat it very often. It’s easy to make and freezes perfectly.
