What I Eat In A Day | On the Weekend: High Protein Dairy-Free Meals

Weekends aren’t too different from weekdays for me when it comes to food. I usually stick to the same way of eating, which is easy balanced meals using what I have prepped or on hand. The main difference is that I may eat out once or twice over the weekend, depending on what I have going on. That’s exactly how this Saturday went. I kept things simple with meals and snacks during the day and had takeout for dinner. This is a look at what I ate: quick meals and a very realistic weekend day for me.

Breakfast

For breakfast, I wanted something quick and easy so I grabbed three Orgain chocolate brownie-flavored protein snack bars. I really enjoy these bars. They taste great and are super convenient. Each bar has 10 grams of protein, so having three gave me a total of 30 grams of protein to start the day. This is one of those breakfasts I look forward to.

Lunch

For lunch, I wanted something that tasted really good but didn’t take much time. I decided on my turkey and cabbage tacos. I made these by using some cooked turkey that I had in the freezer, red onions that I had sliced in the fridge, and some store-bought shredded cabbage.

I put the ground turkey in the microwave to warm up and while that was warming, I started on the rest. I sauteed sliced red onions until they were slightly softened then I added two big handfuls of the shredded cabbage and cooked that together with the red onions for a few minutes. After a couple of minutes I sprinkled in a little taco seasoning, stirred to combine, and then mixed in the warmed ground turkey.

For the tortillas, I lightly sprayed them with cooking spray and crisped them in the air fryer. After everything was done, I topped the mixture with dairy-free sour cream and sriracha. I also had some avocado on the side. I filled each corn tortilla with the mixture. There was quite a bit left over after filling the tortillas so I just ate it on the side. This was so good and came together fast.

After Lunch

I was getting a few things done at home and wanted a cup of tea after lunch. I had a cup of Earl Gray tea and added a teaspoon of honey to it.

Dinner

For dinner, I picked up takeout from one of the few places I like to eat out at. It’s a local Thai place with really good food.

I ordered their teriyaki salmon. It comes with a piece of salmon, teriyaki veggies, and steamed rice. I asked for plain steamed veggies instead of the ones tossed in teriyaki sauce. I feel like they overdo it with the sauce on the veggies. I also added an extra side of veggies since I like to have 2-3 cups of veggies for lunch and dinner. I added a side of peanut sauce to dip the veggies in. I also added grilled teriyaki shrimp for more protein and to make the meal even more filling. They gave so much rice, but I only ate about 1/2 cup.

This meal was delicious, and I felt great after having it. After eating, I had a little salmon, veggies, and peanut sauce left. (I didn’t get a picture of the peanut sauce.)

Snack

A few hours after dinner, I was a little hungry, so I finished the rest of what I didn’t eat of my dinner and had a snack pack of nuts. I like to keep a couple of different types of individually packaged nuts on hand because they are great for quick snacks and to add to meals as a quick fat source.

That’s how the weekend looked for me food-wise. Everything was simple, just the way I like it. If you’re in a season where easy meals are what you need, I hope this post gave you a few helpful ideas!
