What I Eat In A Day | Using Meal Prep On A Busy Day

Some days are all about convenience, and this day was a perfect example of that. I leaned on meal prep to keep things simple and ended up using the same protein (turkey tenderloin) for lunch, dinner, and even as a part of my afternoon snack. While eating the same protein for multiple meals in a day isn’t something I usually do (because I do enjoy variety), on this day it made sense and worked for me. If you’ve ever had a day where variety takes the backseat to ease and practicality, this post may be helpful. Here’s what I ate on this day, using meal prep all day.

Why I Ate The Same Protein All Day

This was not an ideal day of eating in terms of variety, but it was realistic for me. I had turkey tenderloin prepped so instead of cooking a different protein for each meal, I decided to use what I had to save myself time and energy. Not only was I tired, but this happened to be a really busy day. I don’t do this often, but on days when things are busy or I’m feeling low on energy, having a prepped protein that I can use to make balanced meals throughout the day is really important.

Breakfast

For breakfast, I had three Orgain snack protein bars. I have been eating these a lot lately. This breakfast is quick, doesn’t need to be prepped, and gives me some fiber, a good amount of fat, and 30 grams of protein to start my day.

Lunch

Lunch was easy to put together and it was filling.

I had two wraps with turkey tenderloin, light mayo, mustard, and mixed greens. On the side, I had mixed vegetables that I tossed in teriyaki sauce, along with a snack pack of nuts.

I don’t prep all of my vegetables together- I prep them separately and store them in individual containers. That way, I can decide which ones I want when I’m making my meals. On this day, these were the ones I chose, and I just warmed them up together in a pan and added some teriyaki sauce.

Even though I had turkey tenderloin again here, putting it in a wrap with mayo and mustard made it feel different, and pairing it with a big plate of veggies and nuts made it really filling too.

Snack

A few hours before dinner, I had leftover steamed mixed veggies and peanut sauce from my Thai takeout from the night before and a little more of the turkey tenderloin.

This snack was fast to put together and held me over until dinner. The peanut sauce was a delicious way to add flavor to the steamed veggies, with little effort on my part.

Dinner

For dinner, I had turkey tenderloin, green beans, mushrooms, a side salad with a vinaigrette, and some dairy-free mac and cheese that I had prepped. Even though I used the same protein again here, this dinner was (and felt like) a completely different meal.

The only things that I had to make at dinner time were the green beans and mushrooms. This was a quick and satisfying dinner.

Meal prep simplified my day

This is what I ate on this day. Was it the most exciting day of eating? No. But for me, it was practical, high in protein and fiber, and easy- thanks to meal prep. I think it’s important to show days like this because they do happen, and that’s okay. Whether you are short on time, low on energy, or just want to keep things simple, meal prep can make your day so much easier.
